Did I hear you right? Pizza? Healthy?

Yes, you heard correctly!​  Pizza quite generally is not exactly the best thing to be eating in regards to keeping healthy.  It is full of gluten, many times packed with sugar, and is loaded with dairy.  All of which have detrimental effects on your health.  So I asked myself, how can I enjoy our cultures biggest unhealthy endulgance and not feel like I am going to be the next contestant on the Biggest Loser.  What I found is that we can cut out the junk and actually be left with a mighty tasty alternative.  To be honest, my recipe for this changes just about every time I make it.  Sometimes it depends on what I have available or simply that I feel like experimenting.  Below is the general outline that I use but by all means, get fancy with it! 
 
This is just the beginning of the many tasty recipes to come.  The truth is, healthy doesn't have to be boring and it doesn't need to be complicated.  Stay tuned for more of our favorites!
 
Paleo Pizza Soup
Ingredients
1.5-2 lbs ground chicken sausage, fully cooked
6 oz package of uncured pepperoni, cut into 4ths (we use Hormel Natural Choice)
1 28 oz can diced tomatoes
2 14.5 oz can fire roasted tomatoes
1 6 oz can tomato paste
1-2 tablespoons ground chipotle peppers, optional but suggested! (typically this is canned, change based on preference of how spicey you like it.)
If you can't find chipotle peppers, you can also use chipotle tabasco to taste
1 large onion, diced
1 8 oz baby bella mushrooms, sliced​
1.5-2 chopped bell peppers​
2 tablespoon dried oregano
2 tablespoon garlic powder
2 tablespoons honey
1 tablespoon dried basil
1 teaspoon thyme
1/2 teaspon red pepper flakes (optional)
1/2 teaspoon salt, or to taste
 
Instructions
In a blender, combine the diced tomatoes, fire roasted tomatoes, tomato paste, chioptle peppers, and all seasonings. Blend until smooth. 
In a crockpot, combine the the sauce made in the blender with all other ingredients.  Cook for 6-8 hours on low.  I would recommend cooking over night
and reheating as it allows the flavors to more thoroughly combine.  Serve hot and enjoy!
